Whoever is hosting the meeting (we rotate from house to house) cooks the main dish, and then others supplement. We are meeting at my house this month, and I had tentatively planned to make some kind of bean soup. Well, one of the other members just emailed me that she really wants to bring a squash soup, and is that okay? I want to tell her yes, but that leaves me wondering what I should cook now. The other guests will bring bread (this is reliably whole grain as we are a very healthful bunch), dessert, and salad or appetizer (as I instruct). So that's my question: what would you cook to provide a protein and complement a squash soup? Preferably something easy, not too spicy (we have some non-spicy eaters), and will appeal to a wide variety of tastes. Also, it needs to be vegan, and it should serve 8 people. Black beans are niced cooked with cumin and garlic - cumin is a mild non-spicey spice. Or make bean burgers...
