If you want " breakfast " for dinner, I made an awesome tofu scramble the other day. Use a pound of extra firm tofu, crumbled. I sauted a 1/2 an onion in a little water with a splash of good olive oil. When it was transparent, I added 1/2 of a large red bell pepper. I added freshly ground pepper,and sea salt, good amount of tumeric and some garlic powder and a half a jar of mild salsa, and stirred in the tofu. I added more tumeric to color like eggs. It was sooooooo good. You can add anything you want, really, veggie or spice wise. I ate with whole wheat toast and roasted eggplant.
