Welcome Karen!

I don't post hear much but I had to say hello and welcome. AND I have

to say that Vegan with a Vengeance is a terrific cookbook! My husband

and I both like the recipes we've tried so far - especially the

Moroccan Tagine and the Curried Split Pea Soup! The only downside to

the recipes I'd say is that they usually require quite a few ingredients.

As for protein, I often combine two proteins (beans and eggs or beans

and almonds, etc.) just because I don't like to eat a lot of eggs or

beans at one sitting. I'm big on tofu and soy shakes too so that part

of my plan doesn't help you (sorry).

Good luck. Glad to see you here :)
