You could bring bread and peanut butter on the ship with you, then make yourself

a little half-sandwich to carry in case of emergency. That's my fall back

strategy when I travel, especially if I don't have a little fridge available.

Travel Protein?

 

Hi, all. I'm very excited to say that we're going on our

first 'official' family vacation in two weeks! We're going on a

cruise. (Yay me! <VBG>)

 

I used to carry beef jerky with me for traveling (and the only place

I could find it was ABQ. <smile>) But now... Well, you know.

 

I do a lot of nuts as portable snacks when needed (especially for DD -

5.5 y-o), and while I'm on ship there will be cheese, etc. I'm not

worried at all.

 

Just wondering if anybody has ideas for easy and very portable snacks

for when we're off the ship -- I don't want to get stuck. I'll bring

nuts, but was hoping there was something else I'm not thinking of...

 

Ideas? Thoughts? Suggestions? <smile>

Barbara, the only thing I carry is babybel cheese as it keeps for a

few days without the refridgeration. Unless you wanted to pack a

batch of peanut butter cookies from the recipes page?

They may well last a few days. Or pumpkin seeds - we can buy little

bags of mixed seeds. pumpkin/sunflower.

 

But really just wanted to day Bon Voyage.

its an ideal for me - one I went on years ago had a library - water

and books, perfect.

The cruise sounds wonderful! Where are you going?

 

I am a hiker/backpacker, so I'm always thinking about packable foods.

For browns rye-krisp is terrific -- especially good with cheese! Aged

Montery Jack cheese keeps well without refrigeration, though it gets

oily in the heat. It is also known as " Dry Jack " . I like the flavor

better than string or baby bell cheeses, and it seems less " processed " .

Vella <http://www.vellacheese.com/pages/jack2.html> makes a terrific

Aged Jack.

 

The ship will probably have hot water available 24 hours per day, so you

could take instant oatmeal (unsweetened) and top it with mixed coconut

flakes, almonds, pumpkin seeds, raisins, etc.

 

I make " journey cakes " for my longer hikes. Not sure if these are a

brown or a protein. That is one reason I've joined this list -- how to

count foods? Anyway, these are tasty and keep without refrigeration for

almost a week. They are also a lunch bag favorite with my daughter and

her friends! Make these in advance and pack them in individual plastic

bags. Refrigerate till you leave.

 

Cornmeal Journey Cakes

1 cup polenta (or corn meal)

2 Tbsp soy grits (to balance the amino acids)

1 tsp salt

4 cups water

2 each onion, carrots, zucchini, shredded

2 cloves garlic, minced

2 tsp Italian seasoning (or herbs of your choice)

1/4 cup sesame butter (or cashew, almond, peanut, etc.)

1/4 sunflower seeds

3 Tbsp soy sauce

1/4 cup dry milk powder (optional, for added protein)

 

* Cook polenta and soy grits in salted water 15-20 minutes until very

thick.

* Saute veggies and garlic in olive oil till browned and quite dry.

Mix in herbs.

 

* Combine polenta, sesame butter, sunflower seeds, soy sauce, dry

milk powder and mix till smooth.

* Add veggies and mix gently.

* Let cool.

* Form into a dozen patties and bake at 300 degrees (slow oven) for

45 - 60 minutes till golden brown. For travel foods, they should be

quite firm. If they are too moist, they won't keep as long. For lunch

food, use the shorter cooking time.

Lottie I am excited about those journey cakes.

I have been wanting to try polenta for a while. Soy grits Ive never

seen, is there a substitute? or just add more polenta ?

 

sesame butter - is that tahini? I have got tahini in!

since we don't 'do cookies' <smile>, but that is a great, easy-travel idea.
