Do any of you have program-friendly favorites you've used? In the past, I've done stuffed squash and also some non-traditional things like veggie lasagna and lentil-nut loaf. I know that folks on this list are ever so creative ) and I'm guessing that we'd all like to get some new ideas (I know *I* would, LOL). I live in a pretty health oriented town, so I can find whole wheat phyllo dough. The rest is eggs, ricotta, feta, spinach, butter, sauteed onion, etc. I really think he uses a different recipe every year from whatever cookbook he can find, so I would say google it! My favourite thing in the world is a Greek meze, and Ive been avoiding spanakopita because of the pastry.( I dont eat wheat at all) But I love the flavours, and I cant wait to try it. Isnt there a spice in the mix? is it cinnamon? Anyway I am really planning to cook this very soon! There is spelt phyllo dough, Whole foods has it, and I Neptune, a greek bakery in NY will ship it! A tossed salad with at least 10 veggy's in it with a side of tofu, and Triscuits along with a spud for dessert. This works for me and I feel like a Thankful Pilgram w/no harm done so to speak.
