little introduction and a question...

hi :)

im karen and ive been doing the programme since january, im on step 3

and im going back to being a veggie :D

im just after returning to uni as a mature student and im wondering

what i can put in a sandwhich for a good lunch? a sandwhich (or

wrap/pitta) is the best way for me to eat as i tend to have to walk

while eating (annoying but neccesary).Looking forward to getting to

know you all :)

How about marinated tofu slices or peanut butter with bananas (or

fruit if choice).

HI :)

 

Im not too big on soy products like tofu...today i used quorn sausages but

that could get expensive LOL...and im not a peanut butter person...but

quorn is really big news in the UK, you can get all sorts of products -

but need to read the labels as ever, depending on your step.

 

I love falafels - cant beat them wrapped in ww pitta.

here is Jakimarys recipe - my addition is a big bunch of fresh

coriander.

 

I small fat red chilli

2 cloves garlic

1 tsp ground coriander

1 tsp cumin

1/2 tsp bicarb

1/2 tsp cream of tartar

salt and pepper

large tin chickpeas

bunch fresh coriander.

 

whiz it al up in the processor/ fry it in spoonfuls in oil

its also my party piece - great to take along for new years or

gatherings , with some dips.

 

Chickpeas is garbanzo bean but Ive forgotten what American coriander

is - I'll nip back when I remember!

We call ground coriander ground coriander, actually. But when it's fresh, we

call it cilantro.

thats the word I was looking for! thanks. we call coriander -the ground

or whole seed and fresh leafy bit is coriander too.

Im so glad you said cilantro, it was on the tip of my tongue and I

couldnt get at it :)

Hi Karen,

 

Do you eat wheat? If you do, have you tried seitan (made from the protein part

of the

wheat)?

 

You can buy it pre-made or make it yourself. I've done both, and I like my

homemade

better. It works well for me as a protein source and is low in carbs. I

mention this only

because I prefer " denser " proteins like this with a side of brown like beans or

skin-on

potatoes.

 

If you want a recipe for homemade seitan, I can post mine here.

 

I haven't yet tried quorn -- I really detest mushrooms, so I've been a little

put off <smile>.

But I do like tempeh, which uses a mushroom culture, so maybe I'd like quorn.

Please do post your recipe for seitan! I love seitan parmasaen (sp) with a

side of WW spaghetti and sauce and a large serving of peppers on onions.

Yum.
