Guest guest Posted January 21, 2008 Report Share Posted January 21, 2008 Hello, I have been here before briefly but am back again looking for inspiration. I am on Step 3 and almost ready for Step 4. However, I am getting very stuck with veggie options - even my DH has complained that he can only eat so much Quorn... My issue is that I am a 42g per meal, although I think Kathleen mentioned that 31g might be enough. Also, lentils and I don't agree and nuts seem to make my stomach swell. I really need some recipes that can give me the protein I need. I would welcome any suggestions or directions to recipe books. Thank you! Denser, chewier and more flavorful than tofu. I buy it at my natural foods stores. Do you eat wheat? Seitan (wheat gluten) is a dense protein. I eat it occasionally and am very satisfied by it. You can use it in many ways. I make my own from vital wheat gluten flour; I also can buy it in the refrigerated section of my natural foods store. How about cottage cheese? That's a good option for me. And eggs. (I don't know if you eat dairy & eggs) And about nuts...have you tried soaking them in water overnight? I find that they're more digestible this way. I rinse them and cover then well with cold water & soak overnight. In the morning, I drain the water. Hope this helps. Guest guest Posted January 24, 2008 Report Share Posted January 24, 2008 Hello Cinzia, I have sort of got stuck with Quorn and fish. I do have eggs for breakfast. Sometimes I use soy products. I am a bit wary of using too much as I find it tends to creep into most vegetarian products and I'm not sure how much is good for me! But thanks for the reminder - I like tempeh.
