Guest guest Posted April 7, 2000 Report Share Posted April 7, 2000 I totally suggest making " nutritional yum yum " it is very easy to make (all it is, is nutrional yeast and blanched almonds mixed and chopped up together in a blender) either use an old " nut butter jar with a smallish mouth that can fit onto a blender (the lid is a little less than 3 inches in diameter) or a medium sized mason jar would do put nutritional yeast and almonds in the jar and then put the blender blade and parts on the jar, put jar on blender and then blend, take blade off and put lid on tightly and store in your refigerator, all you have to wipe off and clean is the blade, every time your running low add more nuts and N.yeast to the jar, put on blade and blend Use: " red star " nutritional yeast--most bulk whole foods grocery stores carry this kind but if not the supplement company " now " makes it and most health food shops carry " now " (its called NUTRITIONAL YEAST FLAKES: vegitarian support formula) and you could also order it from THE MAIL ORDER CATALOUG call 1800-695-2241 or order online at www.healthy-eating.com and blanched almonds (I buy already blanched slivered almonds but you can blanch yours yourself, if you do so make sure they are completly dry before you combine them with the nutritional yeast otherwise you might make nutrional yeast almond butter rather than 'nutirional yum yum) which is actually a parmeson cheese substitute that taste great on just about everything! Me and my children love it and use it in place of cheese on enchiladas and chili dogs and with corn tortillas. Anyway here it is and it is by far the best one to date and goodness knows I have tried many of them. Let me know what you think. 1/2 nutritional yeast flakes 1/2 flour 2 cups water 1/4 cup vegan margarine ( i use Fleischmann light) 1 tbl garlic powder 1 tbl onion powder mix everything except the butter in a pan over medium heat until it boils, when it boils and thickens up remove from heat and add butter mix till it melts and let cool if you wish. Guest guest Posted April 9, 2000 Report Share Posted April 9, 2000 dear Maureen, when I make what my family calls " nutritional yum yum " I use varing amounts of blanched almonds and nutritional yeast, it always taste good, I just blend until I have my texture and flavor preference. Joanne Stepaniak did write the UNCHEESE COOKBOOK and a number of other excellent books. my recipe came from her Uncheese cookbook but we avoid salt in my house and I think I wanted more yeast flakes to nuts and I wanted my nuts already blanched and slivered to speed up the process (i tended not to dry the nuts good enough when I blanched the almonds myself) anyway here is her recipe which follows: PARMAZANO 1 cup yeast flakes 1/2 cup raw almonds, blanched and patted dry 1/2teaspoon salt (from the uncheese cookbook page 25) HTH, kim aka mamatazz Quote Link to comment Share on other sites More sharing options...
Guest guest Posted October 22, 2005 Report Share Posted October 22, 2005 Sometimes you can find it on e-bay but you have to be careful that the seller ien't selling Nrewer's Yeast (which one particular seller insisted was the same as Nutritional Yeast). Aside from cooking with it, I keep it in a shaker on the table (I grind the flakes) and we use it muh like some use salt. Guest guest Posted December 9, 2005 Report Share Posted December 9, 2005 Nutritional yeast IS yeast. It's just grown differently than baking yeast so that it has more vitamins, etc in it. I'm no expert on it, but if you're allergic to or avoiding yeast for whatever reason, I'd probably stay away from it. We just sprinkle nutritional yeast on top of of pasta etc to get a similar effect to grated cheese. I've seen lots of recepies that mention these - I know I can get them online - but are they the kind of thing that large Tescos/Sainsbury's stock (seeing has how they stock Cheezly etc and I've never noticed it !) I buy it from my local health food store (Infinity Foods in Brighton) but I guess any health food shop should be able to get it for you if they don't already stock it. When we lived in the US the were lots of different kinds of nuritional yeast, some of which were high in B12, which is obviously a good thing for vegans (all yeast tends to be high in various B vitamins, so it's all good). It's high in protein and B-complex vitamins. Two tablespoons contain 8 grams of protein. It looks like thin yellow flakes or powder and smells kind of nutty/cheesy. I get in in bulk at Whole Foods or other natural food stores; it also comes packaged in shaker bottles and canisters. It has a distinctive flavor, which I really like on popcorn, pasta, and veggies. Don't confuse it with brewer's yeast -- it's not the same thing. Let us know if you give it a try!
