And making them into little patties. so heres what Ive been doing lately microwave a sweet potato brown a chopped onion in a tblsp olive oil add a tsp or so of dried sage add a handful of chopped nuts ( walnuts is my favourite) mash in the peeled sweet potato mash in half a tin of red kidney beans ( Have also used chick pea/garbanzo) stir in an egg. into a heatproof dish bake in the oven I like to burn the edges till they are all crispy its even better cut into slices and cold for lunch next day.
