I've looked through the online recipes and most of them require equipment or ingredients that are not available. No, there are no blenders or electric mixers etc. here. I have very basic cooking supplies and foods only. I'm heading home in 4 weeks for the summer and will try to find some more options while I'm there and try to bring some back with me. Although any electrical appliances are too heavy and won't work on the voltage here. For now, I'm feeling fine with what I'm eating as the dried fruits add iron. And I eat cashews at my mid-morning break. I don't tolerate beans or cheese very well so those are not great options for me. I can sometimes get fresh cottage cheese but the spoilage rate is high. When I can get it, I eat it mixed with fruit flavoured yogurt, but usually at lunch. I can also get a salad made with dried tofu sometimes and so eat that for lunch. So, I am getting lots of protein at my other meals.
