The recipe is very forgiving and can be modified in many ways. Last night after work I made a very easy crustless quiche that made 4 servings of protein with some veggie, too. I modified the recipe for crustless mushroom quiche listed in the Lunch section of the recipes page on the Radiant Recovery web site: http://www.radiantrecovery.com/recipes.htm. I don't like mushrooms, so I used about a cup and a half of chopped, partly steamed broccoli. I didn't want the fat and sodium from cheese, so I omitted that. I wanted more protein, so I added 4 egg whites and replaced the 3/4 cup milk with 3/4 cup water + a full scoop of Restore (to the top, about 20 grams of protein). It came out of my glass pie dish beautifully and is a nice firm texture. I think I'll use some herbs the next time I make it, as this one was a little on the bland side. I'm adding a few drops of Tabasco sauce when I eat it! Just thought I'd pass this along. I used to make quiche a lot years ago but got out of the habit.
