I posted this over on the Recipes list and thought it would be

appropriate here, too. The recipe is very forgiving and can be

modified in many ways.

 

Last night after work I made a very easy crustless quiche that made 4

servings of protein with some veggie, too.

 

I modified the recipe for crustless mushroom quiche listed in the

Lunch section of the recipes page on the Radiant Recovery web site:

I don't like mushrooms, so I used about a cup and a half of chopped,

partly steamed broccoli.

 

I didn't want the fat and sodium from cheese, so I omitted that.

 

I wanted more protein, so I added 4 egg whites and replaced the 3/4

cup milk with 3/4 cup water + a full scoop of Restore (to the top,

about 20 grams of protein).

 

It came out of my glass pie dish beautifully and is a nice firm

texture. I think I'll use some herbs the next time I make it, as

this one was a little on the bland side. I'm adding a few drops of

Tabasco sauce when I eat it!

 

Just thought I'd pass this along. I used to make quiche a lot years

ago but got out of the habit. Not dealing with a crust makes it so

easy and quick! Cinzia
