I have changed it depending on the ingredients at hand, but here's the basics: 1 lb. firm tofu mashed with a fork 1 - 2 T turmeric mixed in chopped veggies (I use scallions, red onion, red and green peppers) a few tablespoons beans (I have used white and pintos) 1 T good oil Fry like eggs. The turmeric gives it a cool color and when cooked, it looks like eggs. I like the turmeric for its anti-inflamatory properties. This doesn't quite hold me as regular eggs do, but it's a nice change. It's one of the first ways I learned to use it way back in college, and this recipe is a lot like how I make mine. Very versatile and yummy!
