All measurments are approximate <smile> Mix together: 2 cans or 4-5 cups chickpeas rinsed 1 chopped red bell pepper 4 chopped scallions 2-4 minced cloves of raw garlic minced raw ginger (equal to the garlic) 1/2 t. gound cumin S and P to taste Whisk together lemon juice and olive oil (to your taste) (I used about 1/2 lemon and enough olive oil to turn it a pretty pale yellow.) Pour liquid over bean mix and let rest in fridge for a few hours. The garlic and ginger give it a nice kick, but if you like a little more heat, hot pepper flakes would make a good addition. I am rather fond of raw garlic, and ginger one of my favourite veggies is a portuguese dish I had often as a nibble before a main meal on my holidays, carrots lightly cooked, drained, with raw garlic and olive oil added whilst still hot and allowed to cool. mosaic , " messagefromkaryn " <messagefromkaryn wrote: > > I made this last night and it is really good.
