We are trying to compile breakfast ideas to put on our file so people can get the information and Kathleen wants to put the compilation on the web site. We have had parents b/f list;brits b/f last and the depression b/f list all contributed their findings - but we are really short on vegetarian breakfasts other than shakes. I have looked in the file here but there is only one b/f shake idea. We would really love your input as the veggies on our list are often needing help here. Would it be possible for you to post your ideas for us please? And can anyone put it in the files so I can copy it over to the breakfast team? They're great additions to meals, we just need some dense protein in there too. Kathleen recommends protein you can hold in your hand -- vegetarian sources could be tofu, tempeh, seitan (wheat gluten), cheese, eggs, beans, lentils, quorn (mushroom-based), combos of any of the preceding with nuts and seeds and grains...these are what come to my mind right away. And, of course, shakes made with a variety of protein powders. I bet other folks 'round here can come up with more. If you want meal ideas, Sally: - a wrap made with a whole grain tortilla (flour or corn or even a pancake) with beans and cheese and flavorings like herbs or salsa - quiche/frittata with potatoes and veggies in it - scrambled eggs with whatever you want mixed in, with a brown on the side - oatmeal with protein powder mixed in - those oatmeal-cottage cheese pancakes that are sooooooo yummy (recipe is on the RR web site and in SARP) - tofu scramble: firm tofu mashed and mixed with spices and maybe veggies (sauteed in oil or butter) with whole grain bread or oatmeal or potatoes or brown rice on the side - seitan (wheat gluten) sausages (available in HFS) with beans or potatoes These are what I thought of right away. Of course, you could have any kind of meal at breakfast, as so many of us do! Anyone else have ideas here??
