I already cut off the greens and used them in a recipe, but the beats themselves I have to cook. I have this recipe that calls for roasting them, mashing them and topping them with nut butter, but I'd really love some ideas on what to do for a protein to go with them. After roasting the, how about adding them to a salad - loads of greens and for the protein, add kidney or white navy beans. Sprinkle with raw sunflower seeds and a splash of lemon and olive oil, and, well, I think I'm coming over for lunch!
