Yummy simple lunch

Hi everyone,

 

I just had a sort of " slapped together " lunch that turned out to be yummy.

 

 

I had on hand some fresh tofu, Japanese eggplant (long, slim, purple),

snap peas, a little tomato, and spelt pasta. So this is what I did:

 

 

Rinsed the snap peas and tomatoes, put them on a plate.

Cubed the tofu, put it next to the peas & tomatoes.

Cooked the pasta then put it on top of the tofu.

Sliced the eggplants in half lengthwise, steamed it, then cut it up

and put on top of the pasta.

Combined a few spoonfuls of tahini (sesame butter) with lemon juice,

salt, and cayenne pepper. Spooned some of this over the warm

eggplant, pasta & tofu.

 

Had a few very ripe strawberries for dessert. Dee-lish! Cinzia
