I have been loving having hot meals in a bowl as the weather cools.

I made a seitan stew with green beans, onions, sweet potatoes and

peas that I have with pumpkin muffins. I also made white bean, kale,

carrot, onion and celery soup that I add whole wheat crackers and

grated almond cheese to. Next will be black bean and sweet potato

chili with hard boiled eggs on top. I have some wonderful unusual

bowls that I like to use that make things exciting too.

Oh JoEllen! Those all sound simply wonderful! I would love it if you

would share the recipes!

What section of the store is seitan in?? I have looked but haven't

found it.

Hi JJ,

 

I love soups and stews because there are no recipes per se,

just lots of things boiled in a pot.

 

So for seitan stew, I saute the onions in olive oil first in

the soup pot, then fill it with water and add the green

beans, carrots, peas and seitan. I cut the seitan into small

pieces. I find my seitan in a health food store or in the natural

foods section of the grocery store. The brand I use is White

Wave. After about 20 minutes of boiling I add the sweet potatoes.

They come in later because they dissolve after a while if added

too early. When the veggies are cooked (an hour), I add tamari to

darken it and enough spelt flour (whole wheat would also

work) to thicken it, and salt and pepper to taste.

 

I saute leeks and onions for the white bean soup, and then

again fill the pot with water and add kale (just leaves, no spines),

carrots,celery, sage and a bay leaf and then boil for about a half hour.

Then I add 3 cans of cannellini beans (or any white beans) and cook for

another half hour. At some point the beans will thicken the soup. I add a

little tamari for color and salt and pepper.

These sound so fabulous! Thanks, I can't wait to try them! I love to make soups

and stews, and like you, I rarely have a recipe, so I think I can handle these.

Yes, I would love the pumpkin muffin recipe too!

So seitan is in the refridgerated section, around the tempeh and tofu? Funny I

haven't noticed it, I must be looking right at it!

This makes me excited to cook this weekend :). Thanks so much for sharing what

you do! I would be interested in the pumpkin muffins.

Have also been getting ready for winter, 1st time in a very long

time.................... It's not vegan, but made Shrimp Jambalaya

today. It turned out evan 10 times better then expected. Used Brown

Rice and The Big Huge Shrimp from Costco 2# bag, used the whole

thing. Can't wait to share with friends. It has browns, veggies, &

protein (Smile).
