mushroom and cheese flan

This recipe is for the most amazing mushroom and cheese pie we had for

lunch in Avebury. They call it a Mushroom and Cheese Flan :). Not sure why, to

me a flan is a custardy dessert, but perhaps it has different meaning in the UK.

I made a few adjustments when I made this. First, I halved the mushrooms to

make room for more eggs and milk to up the protein amount. I used 8 eggs, but

there was room for even more and next time I will do that. Second, I didn't

have wheat germ so I substituted more oatmeal instead. Next time I may try

using protein powder instead of the flour to up the protein. Third, I added

some chopped fresh marjoram to the eggs and it was very tasty!

 

A few notes about this, it makes a huge amount of crust, which I found wonderful

since it pretty much stood alone for brown, but don't be surprised when you see

it :). Also, you'll need a large cast iron pan with high sides to cook it

in--make sure to press the crust along the sides up to the top so it'll hold

your filling well. JJ, your question about what to have along side this, well I

had veggies sausages, seemed to fit well, but what you have, and how much, will

depend on how you make the dish. Happy eating!

 

Crust:

8 oz wholemeal crumbs

2 oz wholemeal flour

2 oz wheatgerm

4 oz oatmeal

1 tsp salt

2 tsp marjoram

8 oz butter

 

Filling:

2 Tbsp oil

2 small onions

1 pound mushrooms

8 oz cheddar, grated

4 eggs

10 fl oz milk

salt and pepper

 

1) preheat over to 200 degrees C (about 400 F)

Mix together crumbs, flower, wheatgerm, oatmeal, salt and herbs in a

large bowl. Melt butter and pour in to dry ingredients. Mix well.

Press mixture into a greased flan dish (to me this looked like a big

cast iron frying pan). Bake for 10 minutes, leave to cool.

 

3)

For filling, heat oil and genlry fry onion for 3 minutes, add mushrooms

and cook for 5 minutes. Cover crumb base with cheese, spoon over

mushrooms. Beat eggs and milk together, season well and pour over.

Bake to 35 minutes or just until set.

What does the wholemeal part mean? Is that another way to say whole

wheat?

I have a recipe for cheese and onion flan and it also states 4oz oatmeal and 4oz

wholemeal.

 

I've always used wholewheat flour along with the oatmeal, whatever the

intentions of the recipe book were, and the base is always delicious.
