I had bought a package of paneer (dense Indian cheese) at the market a few weeks ago and it expires soon so I knew I had to get moving on using it. I had seen pakoras made using it at an Indian restaurant once so I thought I'd try something along those lines. Pakoras are Indian snacks that are vegetables, chicken, or cheese, etc breaded in chick pea flour and deep fried. I don't know how to deep fry and am not comfortable experimenting with hot oil so I thought I'd try a variation and just pan fry. First, I cut the paneer into fingers, dipped it in egg whites, then chick pea flour and then pan fried it in coconut oil (I tried Pam at first but it cooked off before the paneer was done so I quickly threw some coconut oil in the pan which seems to work better). To go along with it I made a dip using greek yogurt since is it dense and high in protein, blended with a little mango, garam masala, and cayenne pepper. I served it with brown rice and spinach and am pretty pleased with the results! I wouldn't change a thing next time, although I definitely got more skilled by the end at frying them without burning LOLOL. Heather There are two ways to live your life.
