Guest guest Posted November 10, 2008 Report Share Posted November 10, 2008 I only cooked a little bit this weekend, figuring I have Tuesday off and can cook some then, too. I did spend a bit of time Sunday morning at the Farmer's Market and that has influenced the menu some . So what I already cooked was a quiche that I took with me to a pot luck dinner, a quinoa salad, stir fried seitan, and sauteed vitamin greens in fresh ginger. Left to cook--another quiche because the first one was a big hit and now it's all gone LOL, pumpkin soup, tatsoi (another green I am trying), and stir fried tofu. I also have some fava beans I may cook up with mushrooms, or I am toying with the idea of cooking up some kasha with asparagus pieces. I will see what mood I am when I cook again tomorrow. They are very light in flavor so easy to cook because you can do anything with them . I sauteed mine in fresh ginger and added a dash of low sodium tamari. But it's a bit peppery and can be bitter, and you say that what you have is light in flavor. Plus, mizuna doesn't really look like collards (unless maybe this particular variety does...). There are so many vegetarian options for protein-it's hard to believe I ever wondered if I could find enough. Did you do some more cooking today? I made veggie chili with soy ground beef, pinto beans, tomatoes and sauce, Cincinatti chili spice mix (no sugar, hurray!), black eyed peas and onions and put it over a brown/wild rice and barley medley. Ooh your chili sounds wonderful...and your black eyed peas, where they fresh or dried? I did do more cooking today, made a quiche with some leftovers in the house--I love that about quiche! So ricotta, swiss cheese, parmesan cheese, sundried tomatoes and some fresh majoram (with eggs and milk of course). I enjoy quiche with ricotta, its got a softer texture. I also made kasha with mushrooms and slivered almonds, fried tofu, and asparagus for lunches for the next few days. And, I sauteed my tat soi in fresh ginger to have on hand for a quick veg with the quiche. I peeled, seeded and cut up my pumpkin but at this point I really don't feel like cooking it so the soup will have to wait for another day . Heather There are two ways to live your life.
