finding quick meals

Tonight I figured out a nice quick meal. I found some whole wheat pasta shells

and cheese by Amy's, cooked that while browning some crumbled tempeh and

sauteeing some kale. I mixed the tempeh with the cheesy shells, added a bit of

black and red pepper and voila, instant meals! Took me about 30 minutes total

and I have leftovers for other meals. What kinds of quick vegetarian RR meals

have you all figured out?

Sounds delicious, Heather.

 

For quickie meals, I often open a can of beans. I prefer to cook beans

myself, but the canned ones sure come in handy!

 

I'll add whatever veggies I have around the house to the warming

beans. If I don't have any fresh (which is almost unheard-of for me),

I might use some pickled ones I keep in the fridge. Or I'll warm a

packet of those Indian style veggies in foil pouches. I always have

some of those in the cupboard.

 

For a brown, I'll cook up some quinoa (15 mins) or whole-grain pasta

(10-15 mins) or pull out an Ezekiel english muffin from the freezer.

If worse comes to worse, I'll have some whole-grain crackers (I always

have some of those on hand, too).

 

Sometimes I come up with flavors I really like simply from necessity.

Sometimes the quickie meal flavors are unusual and, um, not ones I'd

Cinzia, I love those foil packets of Indian style veggies. They have some with

pulses, too.

I made a quick and easy meal this past weekend. I took a can of

jalepeno black beans and some precooked brown rice - drain the beans

and cook the rice (boil in bag) mix together and add cheddar cheese on

top and maybe some hot sauce or red pepper flakes. Yummy, and I had raw

carrots and raw pea pods on the side.

I made a quick and easy meal this past weekend. I took a can of

jalepeno black beans and some precooked brown rice - drain the beans

and cook the rice (boil in bag) mix together and add cheddar cheese on

top and maybe some hot sauce or red pepper flakes. Yummy, and I had raw

carrots and raw pea pods on the side.

I'm watching this with interest.

 

My first reaction was " I know lots of... wait... " In most of my

vegetarian cooking I was pretty careful about protein - but the

quickie meals were largely the exception. They were the ones where I'd

call one or two eggs good enough... or count the grated cheese on the

pasta!

 

And, while I was always careful within the guidelines I was seeing,

I'm not that " typical woman - 5'4 " and 130 lbs " the charts described.

My all bean and grain dishes didn't have enough for my real body, in

the RR program. I'm having to adapt recipes a bit.

grams! I feel bloaty if I eat a whole lot of them.

 

One thing that helps me is to use cottage cheese with the

beans/grains. I like it, and it boosts the protein without adding a

lot of bulk or fat (like hard cheese would...I don't use low fat hard

cheeses, LOL).

 

If I have fresh tofu on hand, I use that. I've frozen tofu to store

it longer but don't really like the texture once it's thawed.

 

Seitan (wheat gluten) also works for me occasionally as a dense

protein. I often have some home-made seitan in my freezer.

I think I was born to be a vegetarian, most beans and lentils don't bother me in

the least, and hold me for a long time - sometimes longer than meat! I do know

that I can't eat Kidney beans though - they upset my stomach!

JJ, my system has gotten more sensitive as I've gotten older and legumes do

affect me more, but I am hoping that changes. I want to start having a little

each day and gradually increasing to see if that helps. I used to LOVE lentil

soup, had it almost every day. Would be nice to have a bowl of lentil soup with

grilled cheese and know it wouldn't come back to haunt me later LOL.

I think I was born to be a vegetarian, most beans and lentils don't bother me in

the least, and hold me for a long time - sometimes longer than meat! I do know

Yes, my cells sing when I eat lentil soup or black beans and brown rice, LOL! I

hope that never changes!
