Guest guest Posted December 18, 2008 Report Share Posted December 18, 2008 This weekend I will be driving to Florida from Virginia. The total drive will be 10 hours and I will need to pack food. This is the first time I'll be doing a road trip as a vegetarian on the program. Luckily I had some experience with the travel aspect going to Euro Ranch this year. I went to the store and picked up some whole wheat wraps, baked tofu, and hummous. I think I'll buy some fancy greens too, to make a sandwich for lunch. I'm also packing some crackers (Dr Krackers) and some cottage cheese for snacks, maybe an apple to go with it. My mom, bless her, will have a pot of vegetarian chili ready for me for when we get there. She was so cute, she called me this week to check on the recipe because it calls for a tablespoon of mollases and wanted to know if that would be ok or not. 7 years on the program and she's finally getting it . Cracks me up. For the week I should be ok with supplies, at my Mom's house she already has brown rice, tofu, ezekial bread and unsweetened almond milk for my shakes. I may see if I can get some seitan down there to break up all the soy, but other then that I'll be ok. And of course there's the Indian holiday dinner we'll be making--or going out for LOL. Even if they still don't get *no sugar* LOLOL. My holiday planning is going nicely. Tomorrow night, my boyfriend and I are doing our holiday gift exchange, as he is leaving Sunday for 9 days. I decided to do a potluck on Christmas Eve-Eve with all of my AA friends. I will be making this sugar free raw chocolate that I learned to make last weekend, as well as sugar free gingersnaps. The fun part for me in this is that I haven't gotten to do dessert for the last 3 years - never bothered to figure it out - and this year it has been really fun for me. I have some cool health conscious friends - one is bringing raw smoothies, one is baking spelt bread, and other people are bringing really nice meal stuff. So it will be lots of fun! For our dinner tomorrow night we're going to do some extra fancy stuff too - I'm going to figure out how to make a certain main dish, bake bread, and do artichokes (ooh la la) LOL. Christmas will be low-key, with my parents & sister, just the way I like it. I'm looking forward to the holidays this year for sure! I'll be traveling with my mom and my sister and I'm so grateful they're on board too with the program. We travel with a big cooler full of food and we stay at a little cabin camp about a mile from the nursing home. It has a full kitchen. We make this trip a couple of times a year and we always stop at the same restaurant outside Rapid City which has a couple of meals I can eat and then to Safeway to stock up. So I'll be all set. Guest guest Posted December 18, 2008 Report Share Posted December 18, 2008 Oh, I'll eat just one meal in the car. I'll eat breakfast before I go, lunch from the cooler and dinner when I get there. It's about a 7 hour drive. Then three days of meals at the cabin camp. In previous visits we made a big pot of chili and a big pot of spaghetti sauce and pasta and had that for lunches and dinners.
