Hi everyone,

 

I've been lurking for a while, but I wanted to share my favorite tempeh

marinade. I use it on eggplant and tofu, too. It's from Quick Vegetarian

Pleasures.

 

LEMON-SOY MARINADE

1/2 cup peanut or vegetable oil

3 Tbl fresh lemon juice

4+1/2 Tbl tamari

2 1/2 Tbl sesame oil

3 cloves garlic, minced

1 green onion, thinly sliced

1+1/2 tsp ground ginger

 

I like the marinated tempeh served over quinoa with vegetables. Yum.

Erica, thanks for sending along this marinade, I use soy and ginger a lot, but

never thought to add lemon juice to the mix!
