I honestly can say it is the best chili I've ever had. I ateit with brown rice and shredded cheddar. I'm going to make some now that I'm home for meals this week, I can't wait! Heather Cashew Chili Adapted twice from the Wings of Life cookbook by Julie Jordan 3 cans beans (we used 2 kidney and 1 pinto), rinsed 2 Tablespoons oil 2 medium onions, chopped 2 bell peppers of any color, chopped 1 poblano pepper, chopped 3 garlic cloves mashed 1 teaspoon dried asil 1 teaspoon oregano 1+ Tablespoon chili powder (the more the better) 1 Tablespoon ground cumin 1 quart diced canned tomatoes 2 grated carrots 2 bay leaves 1 cup cashews 1 teaspoon sea salt (omit if desired) 1/4 cup red wine vinegar or cider vinegar 1) Stir fry onions, peppers, poblano, and garlic in oil. Add spices and herbs and stir fry them as well, being careful not to burn the spices 2) Puree the tomatoes and add to spices etc. Add carrots, bay leave nuts and salt. 3) Add the beans and simmer until flavors are cooked through. 4) Add the vinegar a little at a time, tasting between additions (the amount will depend on how sweet or tart the tomatoes are), just before serving. I have a great pumpkin chili I think I'd like to post since we are talking chili and there is over a foot of snow outside! I imagine you could use any type and it will slightly alter the taste, but in a good way. Holy cow a foot of snow! I think it is almost 60 degrees (F) today, feels balmy and strange LOL. Protein will vary a bit depending on which beans you use, and how many cashews. For my pot I figured out there was about 125 grams of protein in the entire pot. If I had portioned it out into 6 servings it would be about 20 grams, 8 servings would be about 15 grams, etc. So if you figure out how many your entire pot is by adding up the beans and cashews protein amount you should be able to figure out how many grams per serving . Let us know if you want help figuring yours out! I should say that I added quite a bit of cheese on mine to get the protein amount up to what I need, plus brown rice for my brown.
