I do eat fish-I like salmon and tuna and shrimp. I eat tofu. But I can not deal with beans. What else is there? That is easy to make-I'm not much of a cook. Guest guest Posted December 29, 2008 Report Share Posted December 29, 2008 Hi Laurie, I'm slowly seeing if I can tolerate beans. I do like eggs and cheese. The other day I made mashed potatoes, skins on of course, formed it into a crust in a pie pan, put cheese on the potato crust, then added three eggs that I had whisked. I baked it at 350 for about 15 minutes. It was so easy, very good and filling. With some vegetable soup and a little green salad and some fruit...easy peasy as my daughter would say.
