Comfort Food Favorites?

Hi,

 

I'm looking to gather some casserole type recipes for chilly evenings. Filling,

comforting,

and a way to stretch one's dollar at the food market! Although I eat gluten

free, I can adapt

recipes if you've any to share with me. I love super easy, assemble ahead kind

of meals,

especially during the winter.

 

So far, here are a couple of my recent successes:

 

Baked vegetable, egg, and cheese casserole with shallots and garlic

 

Baked potato bar with beans, cheese, yogurt and hot sauce

 

Gluten free brown rice mac and cheese with extra yogurt & cottage cheese.

 

Mashed potato quiche crust with egg and cheese, along with some vegetable soup.

 

I'm mulling over a shepard's pie with either tofu or gluten free vegetable

burgers mashed

up. But have yet to try it!

Janine,

 

My favorite go to comfort foods are simple rice and beans.

 

I fry an egg and add a can of black beans, a cup of brown rice and usually some

green chili which I make in great batches freeze.

Another favorite is brown rice and a can garbonzo beans with cashews or almonds

and a curry paste. Usually I'll chop of a few veggies to sautee with this one.

I think my other favorite are stews with potatoes, beans and veggies which

 

Shepherds pie sounds really good! I may have to experiment with that one too.

Again, if you can, try soya mince. You can get it dry or frozen but

the frozen kind would probably have wheat in it.

I found this post really useful, so thanks Janine! I bought some

protein powder yesterday to sprinkle on cereal, put in the appropriate

quantity this morning and found it mixed to a sludge that's now

sitting on the compost. I'd really appreciate some help! I am fully

vegetarian and very reluctant to change that, but I can't see how to

get sufficient quantities of protein into my diet without major weight

gain or coping with inedible protein powder. For those of you who have

been doing this for some time, I'd be really grateful to get an idea

of how you eat over the course of a day. Does anyone have any 'menus'

they could post here? Many thanks. Liz

Oh Liz, that's no good! <smile>

Is this hot or cold cereal? I wouldn't try it on cold cereal and would

probably just make a protein shake and have cereal on the side. If it's

hot cereal, I usually have to add about twice the liquid to get a

decent consistency. I sometimes add almond milk and sometimes just

water. It helps if you flavor it too, with flavorings like almond,

maple, or vanilla.

That's awesome that you compost, Liz! But, yeah, you need that

breakfast to work for you! For breakfast, what kinds of meals did you

like to eat before beginning this program? One of my favorite

breakfasts lately is:

two scrambled eggs, topped with melted cheese, salsa and a dollop of

yogurt, and a side of wild rice. I also have tea with milk.

I have made a tofu scramble for breakfast but it just didn't seem to

hold me as well.

If you think that sounds like way too much food for the morning, I

understand!

How about:

a shake made with milk of your choice, a bit of fruit, some cinnamon,

vanilla and the protein powder, plus a bowl of whole grain cereal such

as oatmeal.

My suggestion is to start off slowly, for example, if the shake and

oatmeal seem like way too much food in the morning, could you just

have half the shake and half the serving of oatmeal.

Hope this helps! I love breakfast but I understand if some people don't!

Janine, thanks so much for bringing this discussion here, I've gotten so many

good ideas!

 

I love quiche, personally. I buy a whole wheat pie shell, mix in eggs, milk,

and whatever cheese I have on hand. A handful of cooked veggies, herbs du jour

and voila! It's pretty hard to mess up and very easy to switch around. I'm

thinking next time I might go for a southwestern one, toss in some corn, black

beans, red bell peppers, cumin and oregano, and cheddar cheese :)

Hi Liz,

 

I really like Restore protein powder from the RR online store.

And even liking it, I would not want it on cold cereal, LOL.

To make cereal have enough protein I use Ezekiel brand and

add lots of wheat germ and walnuts. It's still sludge, but tasty sludge!

My usual breakfast is a protein shake with a green banana (I'm on

step 7), walnuts, quick oats, ice, maple flavoring and almond milk.

 

This winter one of my staple meals each day has been a big bowl

of bean and rice soup (chili, pinto bean with kale and sweet potato,

lentil, etc) with added almond cheese and/or a hard boiled egg or two.

I add the greens (broccoli, green beans, kale, whatever) right to the

bowl. If I feel I need more, I eat toast with nut butter with it.

 

Some other meals I like are Amy's frozen tofu and bean enchiladas

with added almond cheese, avocado and sweet potato, Amy's brown

rice bowl with hard boiled eggs and broccoli, seitan stew, vegetarian

chicken or turkey salad sandwiches, and whole wheat mac and cheese

with cherry tomatoes, greens, and arame (seaweed!).

Heather, I think it is the perfect cheese. It melts like cow's milk

cheese. It has a mild flavor, not a strong one like soy cheese.

Its color and consistency are a lot like mozzerella. Since I use it

melted all the time, it kind of tastes like what I put it in.

cheese. It has a mild flavor, not a strong one like soy cheese.

Hi. Thanks so much to you all for your support and ideas (and for

making me laugh); just what I need! I'm on step 1, but trying to up

the protein content generally in my diet (based on advice from a

nutritionist a couple of years ago). Pre-programme I have eaten

porridge (winter) and fruit smoothy (summer) for breakfast, or

sometimes muesli with rice milk. I tried scrambled egg and toast a few

days ago, but found it than sat heavy all morning... So am looking for

the right protein balance but on lighter, easily digested foods. I'm

also pretty ill (long term), so need to find some resolution between

good nutrition without weight gain, but no possibility of exercise.

The shake you've suggested Janine and JoEllen's cereal could well work

for me, so I will experiment on Saturday. Thank you!

Oh if you want food that won't sit heavy I highly recommend the shake. I make

mine with almond milk, George's Restore, half a banana, vitamin powder, and

cottage cheese (with toast on the side). I vary it here and there depending on

my mood, there is so much you can do with it! The Step 1 list is also a great

resource for shake ideas, if you wanted to hear more about it.

Hi Janine,

 

Your meals sound yummy!

 

One of my favorite comfort foods is beans. Yah, not too exciting, LOL,

but I love them -- almost any kind.

 

I cook beans just about every week. I usually make them pretty plain

so I can use them in various ways:

- in vegetable soup

- lightly sauteed with greens in olive oil and garlic

- mashed up and used for hummus or other dips

- plain (warmed up) and topped with scrambled eggs or chopped seitan

- with hot sauce/salsa, cheese, onions, avocado, and some brown rice

in a bowl

- et cetera!

 

Oh, and I cook them with a little piece of kombu (seaweed), which

helps with the digestion (though some beans are still a challenge for

me, if ya know what i mean <smile>). Cinzia

That oat milk is too sweet for me too, I find myself drinking the

Hi Laurie,

 

Yes, the green banana gives a nice consistency; that's just

why I like them. It's quite an art form getting bananas green

enough not to be sweet but not so green that they're like

wood and impossible to peel. I buy them really green, and

when they get to that perfect place, I put them in the

refrigerator to stop the ripening.

When I count Ezekiel cereal and wheat germ as a protein, I need

to add more cereal as a brown or eat another brown.

Hi Laurie

 

I have heard many people on step 7 say a banana is too sweet for them. That

hasn't been the case for me but I think we're all different in that respect.

Many people use berries instead because they aren't quite so sweet. Let us

know how you like the green banana variety if you try it!

Great to hear from everyone and I've been following each post. I

wanted to let you all know that I had some yummy veg food at Whole

Foods. Chicken Fried Tofu! It was in their take out, fresh foods,

prepared meals section. Of course, no chicken at all was used in the

recipe! My husband is from Texas and he liked it! It was really good

and I plan to get it again and serve it with...hmmm how about mashed

potatoes, steamed veggies and a salad or soup? Maybe I'll get

ambitious and look for a recipe.
