Quorn recipe

Hi there

 

Yesterday I made a great quorn shepherds pie. I sautéed chopped red and white

onions with

red, yellow and orange chopped peppers, then I added 2 packets of quorn and 3

cans of

tinned toms, a bit of red wine, soya sauce, vegetable bouillon, and some instant

gravy. It

tasted yummy and made 5 portions. I used 2 portions for a shepherds pie and

froze the rest.

Then today I discovered whole wheat spaghetti so tonight I am eating it as a

Bolognese sauce

with cheese. Then I am going to look back and see if it has held me as well as

chicken.

Lucie, thanks for the recipe tips. Do you know what the protein count is in the

shepherds pie? I've never cooked with Quorn :)

Hi Lucie,

 

Your recipe sounds like a nice addition to our vegetarian repertoire!

 

To make it completely program-friendly, the red wine should be

eliminated. Sometimes red wine vinegar is a good substitute (if the

recipe needs the acid), and sometimes you can just omit the wine

altogether.

 

I like your adventurous spirit here, trying the whole wheat spaghetti.

Thanks for the report, Lucie. Too bad the ww spaghetti wasn't to your

liking. Can you find brown rice pasta? (I don't recall if you've

tried it...?) There are some other whole-grain pastas out there too.

Not sure what's available outside of the U.S.

 

Sounds to me like you're really getting on with step 3! Your reaction

to your meal is a great thing to notice and journal.

Thanks for the support, yes something has clicked and I've had a whole week of

consistency which doesn't feel like a blip. I had been really struggling with

the 3rd meal in

terms of consistency. I worked out that I can only get a way with about 2/3 veg

meals

each week, and only if the other meals are all with fish or chicken, except

breakfast,

Georges shake and porridge with banana seems to hold me, unless I'm out doing

gardening work then I need a snack of oatcakes and peanut butter.
