Guest guest Posted February 22, 2009 Report Share Posted February 22, 2009 Last week my husband took me to dinner at this charming little Mexican restaurant near my house. The special for the day was veggie enchiladas, which were served with refried beans (vegetarian!), and rice (which I didn't eat cause it was white). Well they were so good I thought I'd try to make some at home. So today I made a big batch of homemade enchilada sauce. It was my second attempt and I think it's much better then the last time . I basically just rehydrated some spicy peppers, pulled out the seeds and stems, and put them in the blender with some canned tomatoes and some cumin. So easy! Then I took corn tortillas, heated them in one pan with the oil, then dipped them in another pan with the sauce and rolled them up with a filling of black beans and cheese. I baked them with the rest of the sauce and cheese on top and my house smells wonderful now. I am making some spanish style brown rice to go with them, which basically means you brown it, and then cook it with tomatoes and garlic and onions. I don't know why -- I always have beans and chili peppers on hand. One thing that stumps me sometimes with Mexican food is veggies. What kind of veggies did you have? I love a nice salad w/Mexican food but don't always feel like making one. I could use some veggie inspiration here, LOL!
