Shari Quinoa Casserole 1 c quinoa 2 c water 1 Tbsp oil 1 c chopped celery (2 stalks) 1 c chopped onion (1 medium onion) 1 tsp basil 1 pound tofu, mashed 1/4 c white miso 1/4 c tahini 3/4 c sliced pitted black olives Preheat oven to 350 degrees F. Wash the quinoa and drain it through a wire strainer (I line the strainer with a coffee filter first). Place it in a pan with the water. Cover and bring to a boil, reduce the heat, and simmer for about 20 minutes or until the water is absorbed. Meanwhile, heat the oil in a skillet. Add the celery, onion and basil, and saute until the vegetables are almost tender. When the quinoa is done, place it in a mixing bowl. Add the sauteed vegetables and the remaining ingredients. Mix well, using your hands if necessary. Pack the mixture into an oiled loaf pan (4-1/2 x 8-1/2 x 2-1/2 inches) or casserole dish. Bake for 35-40 minutes at 350 degrees F. Serve plain or top with a light tomato sauce. (I topped with a diluted sundried tomato pesto.) For casseroles, I usually just use vegetable stock + herbs + garlic with the veg. Keep the water from steaming veg., and you've got a (very basic) veg. stock. If that sounds like a boring casserole, try getting interesting veggies to put in it (e.g. squash, or fling in a chilli to spice it up, if it's still not interesting enough raid the spice-rack). Cashew nuts also go well in things :-) Stirring some miso(1) in at the end will liven something up, but it's strong tasting, so unless you're a marmite fiend I'd start with a small amount of it... Marmite itself is always a good standby for emergency gravy duty, or just to tweak something that's not quite got the tang you expected. If you can get Engevita / nutritional yeast flakes from somewhere, then that adds a nutty, cheesy flavour, but (like miso) it should really be mixed in at the end for the full nutritional value. Pasta goes well with broccolli and broad beans, or even just with herbs/chillis and olive oil. Another good use for pasta is just flinging it in the casserole pot to soak up (a) liquid and (b) flavour - similarly, for little lentils. A recent purchase from Veganstore was hickory smoke essence, which makes casseroles taste pretty good :-) Steve W (1) Miso = fermented soya beans. People use it all the time in the cooking groups i've been in online but i never really knew what it was til the other day. I guessed but didn't think it was available til i saw it at the veganstore. I have some smoky paprika powder which i bet tastes similar. As an aside, with regard to the ethics thread I started, I gather that Marmite is produced by a subsidiary company of Unilever. The likes of Unilever and Procter & Gamble are also companies that I strive to avoid buying things from. Step 3 is where I still am. I used to be vegetarian and would like to put a few veggie meals into my plans to see if they can hold me. I found the help with protein thread really useful and wondered if we could start up a casserole thread. They can be such cheap and easy things to make, but I always seem to end up doing the same thing with lentils, would love to know what other people do? I made a vegetarian chili not long ago and put the recipe up here--it's called a cashew chili. I also love making quiches, which can be a one dish meal (though now days I have extra browns because the crust alone just doesn't hold me). This week I did enchiladas, which I guess is sort of casserole . This is a great idea, I can't wait to hear about what other folks here are doing. Heather There are two ways to live your life. Basically they are corn tortillas wrapped around a filling (can be meat, or in our case vegetarian sources like cheese and beans). They are rolled up and put in a casserole dish and then covered in a spicy tomato sauce, more cheese, and then baked in the oven until the cheese is melted.
