One of our local Mexican restaurants serves them. I thought they sounded odd too. After trying them, I like them a lot. Much better than one would think. Of course, you're certainly entitled to avoid them. Just thought I'd mentionit in case anyone was interested in hearing from someone who had tried them. I've since made them at home by dry-frying hash browns, adding chopped onions and some nutritional yeast orcheeze sauce, wrapping them in tortillas and topping with enchilada sauce. But I wasn't in the mood for bean filling...Dr. McDougall's idea of potato filling just doesn't seem right...I dislike too much tvp and fake meat..What to do? So I put on my thinking cap and looked in the fridge. I had some low fat tofu and decided to use the filling for Susan's lasagna as the filling for my enchiladas. I used about 6 more ounces of spinach than her recipe calls for because we like spinach, no other reason. It also seemed to lighten it up a little, imo. I also added about 1/8 teaspoon of red pepper flakes and topped the whole thing off with a large can of green enchilada sauce. Next time I'll probably make my own, but I didn't have time last week. I used whole wheat flour tortillas because my husband dislikes corn. Next time I think I'll make 1/2 and 1/2. I prefer corn. Overall this was a yummy treat. They have quite the selection, so it didn't get boring in the least. Unfortunately, Mexican food out tends to be quite high in sodium, so I eventually cut it from my diet and tend to stick to making my own to control all the variables. Near as I can remember, it really was quite basic, maybe onions?, but, like a Subway, you could choose the fixins, including beans, lettuce, tomato, hots, sour cream or yogurt (this was before I was vegan and was impressed they offered the yogurt choice). Guest guest Posted September 1, 2008 Report Share Posted September 1, 2008 I make sweet potato enchiladas by sautéing slivered onions until translucent or caramelized, add salt and pepper, mashed sweet potatoes, cumin and a rinsed can of black beans. Shredded mild cheese is totally optional. Make the enchiladas into lightly oiled baking dish (or put light layer salsa instead, and top with mango salsa. Bake 350 until hot, maybe 20 minutes.
