There are quite a few websites, blogs, and photo blogs about vegetarian bentos! I did see that not all of them have adequate protein. For me my favorite bentos tend to be the asian inspired ones with brown rice, a stir fry made with tofu or seitan, vegetables, cheese, nuts, and sometimes fruit. This week I made bean and cheese enchiladas with a brown spanish rice, kale and refried beans. Those also fit nicely in a bento! Heather There are two ways to live your life.
