ricotta gnocchi

I've been working lately on two things: saving money and not wasting food. The

side effect of these endeavors is that I am getting much more inventive in the

kitchen :). So today I discovered in my fridge a container of ricotta cheese I

had forgotten to put into my enchiladas last week. I wanted to use it up

without going to the grocery store again so I searched the web for inspiration

and came up with an idea: ricotta gnocchi. Here is what I did:

 

Ingredients:

3/4 cup brown rice flour (you could use whole wheat or others)

1 cup whole milk ricotta

1/4 cup grated swiss cheese (you could use parmesan)

 

2 tablespoons tomato paste

1 egg yolk

1-2 tablespoons chopped parsley

1 tablespoon olive oil

2 tablespoons salted butter (if you have unsalted, just add a couple shakes of

salt in the first step of the recipe

 

1) in a large bowl mix the ricotta, the yolk, the grated cheese and tomato paste

2) fold in half of the flour

3) place the dough on a well floured surface and knead in the rest of the flour

until its just incorporated

4) split the dough into fours and roll each one out until it's about 1 inch in

circumference. Cut off pieces of dough in 1 inch segments.

5) add oil and butter to a frying pan and heat until butter starts to brown.

Add dough pieces, brown for 2 minutes, and turn over browning the other side.

 

I served this over kale with tomato sauce on top and it was heavenly!

Oh this looks like fun!!! I will try this sometime soon. I've been printing

out RR recipes like crazy lately! :)

Tina, me too LOL! Something about the weather change makes me want to get in

the kitchen more, I think.
