Hey all of you!

I've decided to become vegan just a little while ago, and am simply looking

for likemindeds to talk to, seeing that even more than vegetarians, vegans

are a rare breed. I am shrugging off ridicule from my father, seeing my

mother slowly make the transition to vegetarianism, and meeting a whole lot

of people giving me the " but won't you be deficient of some vital

vitamin/mineral etc " question.

But whatever, in the end I'm just looking for people who enjoy talking about

anything at all through email. Well, yes, that'll be my input for now.

See ya,

Katt

Hi,

I have also recently decided to go vegan and i can understand what

you're going through. My parents Don't understand and complain about

how I am going to get sick. I only know one other vegan and he is

unable to help me with many of my concerns such as beauty products,

cleaning products, and food choices. all he eats is soy burgers and

fries. i can understand the delema and also wanted to meet people

like myself. right now I'm taking things one day at a time reading a

lot and trying to explain to my friends. my motto has been don't

givve up and take things one step at a time.

Best wishes,

Erin

Hey Erin and everyone else!

Your vegan friend sounds like he's living a really healthy life...oh well,

long live supplements in his case. But whatever, eating boringly is not the

curse of the vegan alone. I have to say that at least temporarily, becoming

vegan has given me the excuse to buy more cookbooks (I am an addict, I

admit) and experimentwith foods I was always curious about (like tempeh or

miso) but never got around to actually trying. I love good soymilk, so

there's nothing to complain about. And when that's not available, rice milk

is fine as well, xcept perhaps that it's horribly expensive (7.50/l compared

to soymilk @ 2.10/l). Well, either way, enough rants for today,

hugs,

Katt

A warm welcome, Charlie, and thanks for joining our group.

Men who can cook are especially welcome, and it would be marvelous,

if you could share one or two of your favourite recipes with us. ;)

Me, too, I enjoy many kinds of ethnic foods, especially from the

Middle East and from Thailand, China etc, and its sad to see, that

most people of the Western World not only have dead animals on their

plates, but also kill themselves by the worst kind of fastfood,

earing what they consider to be " food of the civilisation " , which is

fat, salt, meat and chemicalsm or bland tasting stuff from the

freezer.

So, it makes me more than happy to see, that in only three days from

starting this group, so many people have already joined.

Maybe the dream, that one day all people can live in peace with the

animals on this planet can become true?

Lets never give up our hopes!

Love and Pace to all of you!

Hello /Jinjee:

Thank you for providing information regarding the article written by a

New York live foods person. I read his article first and although it

didn't shake me as far as what my personal experience is as far as raw

foods, I wondered about some of the things he was saying. Thank you for

correcting his mistruths. Blessings, Ashtarra

Actually wheat is the only thing really major. Dairy and eggs are easy to get

around once you start. Find out where your nearest health food store (like

Whole Foods) is and look for non-dairy stuff there. They've got everything from

sour cream to cream cheese, ice cream, milk, cheese, etc. all made from soy or

other non-dairy sources. Some are really good, some are not so it'll take some

experimenting. I'm speaking as someone who's been a Vegan just over 2 years now

and tried going wheat free (to see if I had a sensitivity to it) for a few

weeks. THAT was hard! I feel for your son. :(

Take care,

Tammy

Hi,

I am new to the group and have been having a hard time with cooking

with my crockpot. Last year in April we found out our two year old

son can't have dairy, wheat/gluten, eggs, and citrus. I have used

my crockpot for many meals but once we had to limit his foods I have

been stumped. I am hoping with this group I can find some very good

recipes that we can use for our whole family. Citrus is a minor

thing, but the others are a major deal. Thank you so very much with

letting me be on your list.

Hi Rebecca. Some of my favorite meals are vegan and I hadn't realized

it until I've either made it or eaten it on several occasions. I

don't cook very much with substitute dairy products and have found

that many dishes have turned out wonderful without them or the dairy

products themselves. So, hang in there and check out the files here

for some good recipes that might work for you.

One bit of caution as far as substitutes goes. Some veggie patties

(or meat substitutes) have egg whites in them (if you happen to need a

substitute for meat) and may not work with your son, given that you

mentioned eggs.

I believe Morning Star Farms products have egg whites but some Boca

products do not. Other members, feel free to correct me or expound on

the matter.

Take care,

Shawn :)

Hi my name is Brett Sanders and I look forward to learning from you all

and hope I can help as well.

Hi Brett,

I don't post often, but I wanted to say hello. My name is Donna. I've

been a vegetarian for 24 yrs. I've been a vegan on and off, and a

consistent vegan for almost 2 years. I love the crockpot, because I

spend most of my time online, and not in the kitchen :-) At the North

American Vegetarian Summerfest last summer, I had the pleasure of

meeting Robin Robertson, the author of " Fresh from the Vegetarian

Crockpot " . She is, I believe, working on a low glycemic cookbook, and I

guess she will be presenting it at this year's Summerfest. Welcome to

the list.

Raw Vegan compliments for Yerba Mate:

Coffee subsitute:

There are many Mate on the market. The greener it is

the more medicinal it seems to feel and taste. It is

one of the only herbal teas that feel healthy some

times.

One of the more decadent but most flavorful is Dark

roast Yerba mate and grain beverage " Mate Factor "

http://www.matefactor.com/LooseTeas.htm

This is not raw but it is a tea and a very high

quality product which has something distinct about it

and can be used to wean one off of coffee.

I recommend blending it on high as it froths up in a

magical way and is delicious all by itself. But for a

out of this world rich decadent hot or iced Mate Late,

try

Cream: Artisana raw coconut butter... fab, thick like

a nut butter but creamy and white like a milk.

Sweetner: Agave

or can use raw honey if you wish.

I like something warm in the morning too, I was drinking an entire pot of coffee

by myself during a day, but started getting a tightness in my chest and decided

to give up coffee and the only soda I drank(blue sky pomegranate). I had a

horrible week of headaches and feeling like Cr*p but after that the coffee was

not a problem. I still enjoy warm drinks, but find that an herbal tea like

dandelion tea or spearmint from the garden is great. I have also found that as I

am drinking more water, I am drinking less of the herbals, now it is not even

everyday but maybe a few times a week. I do start my day with a great juice

though, I blend up a stalk of celery, grapes, blueberries and a touch of

cilantro. Then I am ready to go until about 2:30.

But again, that first week, I felt like it might be worth it to hve a heart

attack if only it meant I could have a " real " cup of starbucks....

[Raw Food] new to the group

Hi there,

I'm new to the group and have been enjoying reading a few posts. I'm very

happy to see this is a warm and accepting group with lots of helpful

responses. I've been off and on raw for about a year. I love trying new raw

recipes! I pack raw for lunch almost everyday, but eating at home - living

with 2 bread lovers! - is a little harder. My husband and I have been vegan

for almost 20 years and my 11yo daughter has been vegan her whole life. I'm

glad I found this group!

I've been trying to use raw agave nectar in some recipes and on my raw

granola but I found it made me nauseous! I was quite surprised and

disappointed by this - anyone else experience a bad relationship with agave?

Oh and I also have an ongoing struggle with caffeine addiction. If anyone

has any tips for handling the psychological addiction of needing a warm

cuppa in the morning please pass it on!

My favorite smoothie of late is a lovingly sectioned grapefruit whirled in

my vitamix with several handfuls of fresh pineapple chunks. I sip on it all

morning to keep munchies at bay til lunch. It's a beautiful frothy pink!

thanks!

-Caroline

Hi, I'm new to the group as well. I live in Canada, so I share your northerly

concern. I don't

seem to have any trouble finding half decent veggies. I mean, in the grocery

store, they

are nothing like fresh picked from the garden, but ... in the summer, do you

have a

farmer's market around? You could probably get good greens there.

I read that fruits without seeds have been hybridized, that is, they are not as

healthy for

you. But, I'm new at this. Someone else may have a better answer for you.

Can you be more specific about which fruits you are referring?

if, for example, it is a seedless papaya, it can be related to

pollination and the timing of it. if it's something like a persimmon

or citrus, i have more often heard that it is likely to more

domesticated- and therefore sterile and less nutritious. not gospel

truth, but what i have discovered for myself.

Nancy, welcome to the group. Here are some websites that offer free recipes. They are a great start: Dr. McDougall, FatFreeVegan and its blog, and the Magic Loaf Studio. You can use the last one to make not only loaves, but I also take the mixture and use it to make patties. I freeze any extras. (A tip is to put parchment paper or wax paper between the burgers before freezing them), May I ask what book you read? That would help me to know what your goal is.There are thousands of recipes, literally. I think your son in culinary school will learn that in time. After all, most of the flavor

is foods is actually achieved through the use of PLANTS. Herbs and spices are plants! :-) Hope this info helps you get started, Nancy. Btw, I like your name. My oldest sister is named Nancy. Marthabraseltonmomof3 <braseltonmomof3 Sent: Thursday, May 7, 2009 8:31:40 AM New to the group

Hello,

New to the group and I wanted to introduce my family.

Hubby and I have been married for 20yrs and have 3 children--a 19yr old son, who is going to culinary school(he is not liking the new eating style), a 13yr old son and a 11yr old daughter.

Hubby and youngest son are willing to try our new eating style, which is a big surprise to me!!

Daughter and I have been ready for a few years now, but never committed.

After reading a book last week, I decided to commit.

I do not know what to cook,I really need help!!!!

We have tried tofu and do NOT like it at all!

We love pasta and we would eat beans if I could find a good recipe that is seasoned quite well!

hi all

I was vegetarian for over ten years but now eat some meat, usually at lunch.

My body likes dense proteins, especially chicken or turkey, & fish.

I always have soya milk & PP, & I eat a lot of lentils, tempeh, & some eggs.

I am a veggie fiend, & I would like to explore more protein options.
