So one of my newest tools in my arsenal of eating vegetarian meals out is

something called a Mr. Bento. It is a thermos with four inner containers that

can keep food warm for hours. I usually prefer warm food for meals. I thought

it would be good to share some of the things I put in it. So just to give some

background, the containers are different sizes, with the bottom container

holding about 1 cup of soup, the next container holding 2 cups of rice (though I

usually do half veggies), the next container holding about 1 cup of veggies or

other items and the top container holding about 3/4 cups of anything. They stay

hotest from the bottom up (thus the soup is in that container, it even has a

great leak free lid!!).

 

Here are some of the things I do (or plan to do):

1) veggie chicken and butternut squash soup; 1 cup brown rice, 1 cup kale; 1

slice banana bread; handful almonds

2) miso soup with extra tofu; 1 cup stir fried brown rice with tempeh crumbles

and ginger, 1 cup spinach with sesame seeds; brown rice crackers; a few apple

slices

3) 1 cup cashew chili; 1 cup brown rice, 1 cup chopped green beans; 1 slice corn

bread; 1/4 cup cheese and 1/4 cup sour cream for the chili

4) 1 cup enchiladas; 1 cup brown rice, 1 cup spinach; sliced red and yellow bell

peppers; sliced strawberries

5) 1 cup veggie soup; 2 cups cajun beans and rice; 1 cup sliced cucumbers; 1/4

cup sour cream and dill (to dip the cukes in or top the rice with)

6) 1 cup saag paneer; 1 cup brown rice, 1 cup broccoli; 1 cup spinach and

lentils; mixed berries

 

Of course you could do all these things without a Mr. Bento, too!
