my full freezer

I just get so warm and fuzzy from a full freezer. Right now mine is so stuffed

with ready made meals that I may not have to cook again for a month. I like

cooking big batches of things and then slowly adding portions to the freezer.

I have some soup made with soy chicken and wild rice, a fritatta made with brown

rice and farmers market veggies, Cincinnati Chili made with Quorn and red beans

(I add rice for the brown later) not to mention the bits and pieces I can pull

from later. Like I have brown rice tortillas that I use for black bean and

cheese burritos, or peanut butter protein balls that I use to amp up the protein

for a meal. Just to name a few. I'm kind of amazed I can get all this into my

freezer! It does make things easy not having to cook every day, and knowing I

have program friendly vegetarian meals on hand.

Sure! I based them off a recipe from the Living Without website:

 

 

Power Bars

MAKES 20 TO 24 BALLS

These little bars pack a sizable protein punch for a quick energy boost.

1 Cup almond butter

4 Tablespoons Coconut Flour

4 Scoops Restore

3/4 cups quinoa flakes

¼ cup flax meal

1 banana, mushed

½ cups lightly toasted, unsweetened coconut

1. Combine almond butter, amaranth flakes, protein powder, flax meal and date

sugar in bowl of a mixer. Use beater attachment to combine ingredients. If

necessary, use your hands to work mixture into a ball.

2. Scoop small golf ball-size portions and form into small bars. Roll each in

toasted coconut to coat.

3. Refrigerate for at least 1 hour. Store in an air-tight

container in refrigerator for up to 1 week

 

I froze mine and they are fine! Please note that mine are quite crumbly and I

think it's because the recipe didn't state that the flax meal should've been

mixed with a little water to make it a binder LOL. So definitely make sure to

do that.

Sounds georgous Heather and I know what you mean about warm and fuzzy. How do

you make your peanut butter protein balls - I like the sound of those.

I just love these - they are another goodie from Sarah Brown who I am becoming

very fond of! I served them with a tomato and onion bbq sauce sweetened with a

little apple juice.

 

I'm including the dried apricot version as I use hunza which aren't too sweet.

I also loved the version I did with half a pink lady apple.

 

Nut Burgers

 

 

 

6 sticks celery

 

1 medium onion

 

1 largish carrot

 

1 segment of garlic

 

2 tbsp olive oil

 

 

 

400g hazelnuts (I think thats around 4/5 cups)

 

2 heaped spoons ground almonds

 

2 egg

 

 

 

2 heaped tablespoons of gram flour

 

1 heaped tsp fines herbs

 

6 dried apricots or half eating apple chopped up

 

 

 

Put nuts and apricots/apple into food processor and whizz until they resemble

fine crumbs - transfer into mixing bowl.

 

Repeat with vegetables and oil then add to mixing bowl.

 

Stir in the beaten eggs, ground almonds, gram flour and herbs.

 

 

 

Shape into burgers using a burger ring and place on baking tray - bake in

moderate oven for 30 minutes.

 

 

 

Or place the mixture in a loaf tin and press down firmly - will need 45 minutes

in a moderate oven.

hi Heather

 

I'm doing well with my vegging!

 

I have quite a lot of stuff [including sprouted & unsprouted lentil curries that

I portion half & half] in the freezer also. My totally veggie brother is coming

for a few days the weekend after next so I Will roast some tempeh & do some

chilli with soya shapes also before then.

 

I'd love to have brown rice tortillas. Do you make these yourself, or can you

buy them? I haven't seen them here.

 

I will take a look at the protein ball recipe. You can get Bounce balls here

but I think they have some sort of syrup in them.

I made them for a friends lunch a few days ago and although no-one was a

vegetarian they all asked me for the recipe and two of them emailed me to remind

me to send it!

 

High recommendation I thought.

Oh sorry! That was from the text of the original recipe! I omitted it

completely, subbing in a banana instead, which is in the ingredient list. Sorry

about that LOL.

I buy the brown rice tortilla's, there are two local chains that carry them, not

sure if they've made it to the UK or not to be honest. I sure hope so though,

cause they are yummy :).
