Guest guest Posted August 6, 2009 Report Share Posted August 6, 2009 Hi, I've just joined the Vegetarian List, yet have been trying the program for years, unfortunately never making it to Step 6. Recently I have decided to gradually become vegetarian. My usual breakfast will still be okay - 1/3 cup raw old fashioned oats, 3 T. toasted soya granules (16.5 grams protein), 2 T. walnuts, 1 T. ground flaxseed, 1/2 cup nonfat Greek yogurt, 1 c. water. However, my usual lunch will not be okay, since it consisted of chicken salad made from canned chicken breast. I'm looking for some extremely easy and quick lunch ideas. I don't like to use items high in sodium - so cottage cheese is out. I also like to make lunch and then have leftovers for the next day so that I don't have to fix lunch everyday. I think soups will work well when the weather gets cold. But soups won't work right now when the weather is 90 degrees outside. Thanks for any suggestions you have. I like to marinade [in olive oil, garlic & a splash of balsamic usually] a block of tempeh, & then to roast it [with whole garlic cloves] Half a block would be enough protein for you with veggies, & a complex carb. I sometimes treat mine as a burger & have chunks of brown rice bread or a roll, with salad garnish, but always extra veg on the side. If you eat eggs, a frittata is nice, & again you can make it with 6 eggs & just eat half each time. The combinations are endless - from Spanish with potato slices & peas, to roasted red pepper & mushroom. Or a plain version with herbs can be lovely too. Are you sure about your protein amounts? Eating enough is vital to making the program work, & it does work for everyone who does it. Your breakfast looks very light to me. Does it hold you til lunch? I take a half cup or more of canned black beans (you can get low sodium or rinse if you'd like), add to it a half cup of shredded cheese and wrap it in a whole grained toritilla. I love these because you can add whatever other odds and ends you'd like, salsa, guacomole, sour cream, grilled veggies, etc depending on your taste. They assemble very quickly. Typically, though I spend some time on the weekend making dishes that I can freeze or reheat later for lunches as I need quick meals too. What about quiches? Have you ever made one of those? They can be eaten hot or cold . By the way, I noticed your use of the word " gradual " in becoming vegetarian and I wanted to share that I took about 2 years to gradually make the switch myself. My body was pretty vocal about when she was ready to do more (or needing to step back). So I say you are in a good frame of mind. Heather PS what are soya granuales? So, thanks for your recipe. It looks as though you're right about half a block being the right amount of protein for me. I try to get 22-24 grams per meal. At breakfast the soya granules and the Greek yogurt constitute my protein. Breakfast does hold me till lunch, as long as lunch is no longer than 5 hours later. I like to have omelettes/frittatas for dinner rather than lunch. I need something easier and quicker for lunch. I have only tried adding them to my morning oatmeal. Nutritional facts per one-quarter cup (42 grams)serving size: Calories 150, Fat 1 gram, Sodium 5 mg, Total Carbohydrate 13 g (Fiber 8g, Sugars 5 g), Protein 22 grams.
