Guest guest
My body has been making suggestions via my journal for quite some time now about letting go of red meat. When I read up on proteins and amino acids I thought that 'going veggie' would be possible for me and that has proved to be very much the case. It's been revelationary healthwise and in just about every area of my life and my family are just loving my new meals - DH is just about in ecstacy every dinner time! I realized I have been in a bit of staleness around my cooking for some time - enthusiastic about my fish dishes and stir fries and very resistant to the normal Sunday roasts and slow cooker meat meals which were my main repertoire. On a retreat recently I got the chance to talk to the cook (spent more time in the kitchen than in retreat actually LOL) and now I am making some absolutely wonderful salads with my food processor. Raw beetroot, celeriac and carrot with a bit of zing from ginger, lime or apple mixed in. I made several versions of the nut burgers and have developed a great oat bake which cuts up into slices for portable meals. I guess my only struggle is to get the protein amounts without resorting to too much cheese as dairy and my journal don't seem to get along in larger quantity. Eggs are great and I still buy a small chicken every week so I am managing (with avocado houmous as a standby for the spartan days).I switched my occasional snacks to hazel nuts or roasted broad/fava beans. I am monitoring my protein intake very carefully but mostly I seem to be stable on a slightly smaller amount 20g per meal. Perhaps my body is happy because I am making it up with the higher protein grains I am using or because I weigh a bit less so nowadays I need less? Perhaps it's because I am three years on program so healing is more advanced? Anyhow I am very very happy with the change and wanted you guys to know that I am very grateful for all the ideas I am reading here even if I don't respond very often.
