Guest guest Posted September 3, 2009 Report Share Posted September 3, 2009 You can use beans instead of lentils - but you can't usually just substitute them uncooked into your recipe. Lentils and split peas cook much more quickly than other beans, and aren't usually presoaked. I think you can probably use split peas as a straight substitution. Otherwise, I'd cook the beans first, probably separately, and then add them in. You can probably cook them until they are just tender, but still a bit firm, and then continue with the original lentil recipe.
