Guest guest Posted September 3, 2009 Report Share Posted September 3, 2009 Hi all, I recently tried a recipe that my husband and I enjoyed. Thought I would share with you since it's quite versatile. It does take bar-b-q sauce - next time I will try substituting a program friendly bar-b-q sauce that I found in Naomi Muller's cookbook " Nutritious and Delicious Kosher Cooking " . Garden Sloppy Joes 2 teaspoons olive oil 1 cup chopped onion 1 cup chopped celery 1/2 cup diced carrot 1 (8 ounce)package tempeh, crumbled 2 cups canned crushed tomatoes in puree, undrained 1/4 cup water 1/4 cup bottled bar-b-q sauce 2 teaspoons chili powder 1/2 teaspoon dried oregano 1/2 teaspoon pepper 1/4 teaspoon salt Heat oil in a nonstick skillet over medium heat. Add onion, celery, carrot, and tempeh, and saute 5 minutes. Stir in tomatoes and the rest of the ingredients. Bring to a boil; cover, reduce heat, and simmer 10 minutes, stirring occasionally. Uncover and cook an additional 3 minutes or until mixture is slightly thick. This makes 3 servings. I doubled the recipe. One night we had the sloppy joes on top of toasted whole grain burger buns. One night we had the sloppy joes on top of brown rice. And my husbands favorite - one night we had the sloppy joes as part of a taco salad - baked tortilla chips on the bottom, Romaine lettuce layer next, sloppy joes next, shredded cheese next, dabs of sour cream next and salsa, if desired.
