And since it is not recommended to eat soy at each meal, what do you eat? Eggs and beans. I am having a hard time staying a vegetarian. I was diagnosed as gluten intolerant (didn't ever go get a biopsy to determine celiac disease) a few years ago, so yes, I am totally gluten free. I totally understand. I eat quite a bit of eggs. And cheese. I am reconsidering whether or not I can stay veg. I want to have enough stable energy to be my best self, and I want to nourish myself happily with wonderful tastes and variety. I don't react well to beans and I actually find it hard to eat a lot of grains, it makes my stomach hurt, and then I feel all over not well. I'm glad I have this group to support me, and Laurie, I support your choices! And many of the meat replacements have gluten in them. For breakfast I do shake with protein powder (I mix whey and a brown rice one). For dinner I usually have eggs. And how much do you eat? I cannot have just beans for my protein, it upsets my stomach quite a bit. So I usually stack my proteins with beans and cheese and nuts--like the cashew chili with cheese on top I've posted about before. My stomach has definitely gotten more sensitive the older I get, I find certain foods agree with it better then others (like raw carrots or lots of onion mean belly aches for example). This may be a discussion that goes beyond the scope of this group, and this group is so good at staying on topic! I've been diagnosed with an auto immune disease, uveitis, which is part of an auto immune type of arthritis called ankylosing spondylitis in my case. The uveitis effects my eyes and that was the beginning of finding out what the IBS and joint pain and other symptoms may be related to. There is a dietary intervention for AS that removes or reduces starch to help with symptoms. Dr Ebringer, Carol Sinclair and others have written about it and there is a support group that has a lot of information about it. I tried it, and found that it helped me a great deal, but then added some starches back in, such as quinoa, and yukon gold potatoes, so that my blood sugar would stay more stable. I felt great. Then, I felt badly about not being a vegetarian, and gradually went back to eating vegetarian. I'm comparing the ways I felt. The beauty of what we all learn from Kathleen's program is how to " read " our amazing bodies. In generally I've been not feeling as well. Being a gluten free vegetarian? No problem! So doable!
