I'm one of 2 (out of a 40 people office), and there are a few more " part time " vegetarians. Every year as a fundraiser they do a hot dog lunch. This year one of the coordinators came and asked me what type of veggie dog they should buy. Then there was a chili cookoff. I didn't go because I knew there was no way anyone would cook a vegetarian chili, but right as I was finishing my lunch one of the coordinators came by to tell me he contributed a vegetarian chili. Well I went down and sure enough one of the chilis was vegetarian! It was a really yummy dish, though hardly any protein. Luckily I had already eaten my regular protein filled lunch, but it was low on veggies (the fridge at work broke and stopped chilling things and I had to throw out what I'd brought earlier in the week). Well this chili was really wonderful. I thought I would share the recipe. Of course you'll need to add your own protein of choice to it Slow Cooker Vegetable Chili, from Allrecipes.com 1 (28 ounce) can whole peeled tomatoes with juice 1 (15 ounce) can garbanzo beans, drained 2 zucchini, thinly sliced 1 onion, chopped 2 carrots, sliced 2 stalks celery, sliced 1 red bell pepper, chopped 1/3 cup chili powder 1 (4 ounce) can chopped green chile peppers 2 cloves garlic, minced 1 tablespoon dried oregano 2 teaspoons ground cumin 1 teaspoon salt DIRECTIONS: 1. In a slow cooker, combine the tomatoes, chickpeas, zucchini, onion, carrots, celery, red bell pepper, green bell pepper, chili powder, green chile peppers, garlic, oregano, cumin and salt. 2. Choosing to live in the light of Radiance is soooooo much more important to us. A Carnivore was visiting my home and wanted to see what I eat.... After a tour of my fridge & cabinets, she was just " shaking her head no " , indicating she could not live that way. Kind of funny to me I felt sorry for her... The vegetarian option at the restaurant was liberally a big plate of sauteed veggies (wild musrooms, broccoli rabe, etc, and roasted potatoes). They were WONDERFUL, but no protein. I often bring dinner leftovers for lunch at work. My breaking recipe news is that: I...made...paneer! For the first time! I cooked lentils in the whey left over from making the paneer. To the lentils I added the usual: onion, garlic, ginger, spices, spinach. Basmati rice, peas, carrot slices, and yogurt on the side. Paneer topping the lentils. Then I had a fresh, ripe pear sliced with a little more paneer. Where I work there is no veggie food in the canteen apart from [OK for some] : omelette.
