Guest guest Posted January 3, 2010 Report Share Posted January 3, 2010 I recently made pancakes from Almond Meal and was pleasantly surprised at the results (its not as fluffy as white flour ones but its better tasting than wheat flour ones). There are 7 grams of protein for each 5 grams of carbs in the almond meal (this doesn't include the egg protein in the overall product) and at least at the Step One level I find it a useful source of protein. Recipe was fairly easy too (from memory) 8 ounces almond meal (I ended up adding more guess my eggs were too big) 2 eggs 2 tablespoon vegetable oil (its a bit of a dry pancake even with this) 1/4 tsp salt 1 tablespoon sweetener (or sweetener substitute or leave out) 1/4 cup of sparkling water (you can use reg water but this gives them more fluff kinda) Note - it doesn't bubble like white flour pancakes so you flip em over when you can see its darkening/getting solid/smell that its ready. My children love pancakes and they eat all kinds so long as they are called pancakes.
