good days for soups

Well it's getting cold in my area as Autumn is taking hold. Today it is in the

40's and rainy and I am grateful for one thing: soup! I had a big head of

broccoli from my CSA and was having troubles brainstorming what to do with it.

Just a side of broccoli didn't appeal to me (ever since I went vegetarian for

some reason LOLOL). So I decided to make a creamy broccoli soup. First I cut it

up in the pieces, along with a bunch of fingerling potatoes with the skin still

on them, and put them in a pot of water. I cooked them until both broccoli and

potato were done, then used an immersion blender to make it nice and creamy.

Then I added a block of silken tofu, a block of cream cheese, a half cup of

nutritional yeast and some salt and pepper--and a dash of nutmeg. I blended

them up again and served it with a big handful of shredded cheddar on top. I am

in veggie heaven! And I have my protein, browns and veggies all in one bowl, I

just love one dish meals

Yay, Heather, thanks for sharing a yummy recipe. I too am a huge fan

of the one bowl meal!

You missed an opportunity to sneak cabbage in!

 

I have made soup twice this week - the second batch had broccoli. I always add

spuds & celery & a carrot or two.
