Usually I do something with eggs as they are readily available. Today, however, we were out and I had to throw something together quickly. I looked in the fridge, I had cheese, olives, sour cream, salsa, cheese, and soy steak strips. Put them together and I had the makings for quesadillas! So I put a tortilla in a frying pan, topped it with cheese and the soy steak, put another tortilla on top and added more cheese and olives. Then I heated it until the cheese was melted and served it with a dipping sauce of salsa and sour cream mixed. It was yummy, definitely a quick meal keeper!
