portabella mushroom help

When I was at my local health food store this weekend I heard the siren call of

portabella mushrooms. I bought 4 giant caps intending to make stuffed mushrooms,

but not knowing in what way. I thought I'd ask here for some brilliant ideas

:). Ideally it'd have both the protein and carb right in the stuffing. Anyone

have recommendations?

Heather I'd do a lentil or bean chilli with rice or millet. Top with cheese.

 

Serve with a spinach salad.

Hi all,

I'm laughing because I bought two p'bellas the other week. Full of

plans to stuff! I ended up making a soup! Silken tofu instead of

cream. It came out great!

However you stuff 'em...enjoy!
