Quinoa, Avacado & Sweet Potato Timbale with Roasted Tomatillo Dressing

Decided to try a new recipe for dinner. Made the above dinner with Black

Quinoa, it was just wonderful. Never used with Tomatillo's before they were

kind of fun.

 

If anyone wants the recipe, just let me know.
