Also, I'm out of corn-free Xanthan gum and need to make a loaf of bread - like, now... I'm out of Guar gum, too. Does anyone have a substitute? Thanks! Guest guest Posted January 10, 2002 Report Share Posted January 10, 2002 BTW, I've spent my morning making different tortilla recipes from " Allergy Cooking with Ease " - all recipes are free of wheat, eggs, dairy, corn and other things. The tortilla recipes just call for the flour, salt and water. They don't seem too bad to me, but I'll have to go try them out on ds when he gets home from school. He is going to bring me back the special cast iron frying pan for making roti, along with the special screen they use of puffing the roti once cooked. Since we can't use gluten grains around here, and corn is sometimes only he was also going to ask around to some of the older indian ladies about using chana instead. I personally detest the bean taste of chana, but he figures it will be too crumbly anyway to roll out properly. I have two sons who have it but who were declared non-celiac gluten intolerant. Most people who have DH do not show positive to the gold standard of Celiac diagnosis - the biopsy. I'm focused on making sure things are balanced. I've always loved breakfast so that was not hard. But what i have been doing is using gluten free bread, cutting down on butter, and concentrating more on plant protien. I have really wanted to go on a diet, but knew that never produced lasting results. Sometimes i just want to wake up in a new body! Instead i am using techniques to help me with patience. Am working on the supplements. I think adding the liquid B vitamins has been helpful. I have vit c powder but it is too acidy, so am going to get some capsules and add zinc. Can't eat the potato before bed as am not suppose to eat after 8pm, but use potatoes at meals. I have not given up sugar products (especially wine at dinner time) but seem to be using them less and using more fruit. i must be doing something right because yesterday i put on some pants and they were looser. I have been journalling and not every day because of my injured hand, but I did a lot of the background history when i was in OA for all those years, sorry i don't know if this is breaking anonymity. Your point is well taken. Absolutely, it is. I am keeping track of my emotional eating which a most important thing. The reason i went ahead and started with the supplements and potatoes was because i knew it would help me. I am not a young person so have had enough time to have too much knowledge, and the humbling realizations that my diet and sugar cutting successes have been short-lived. (I have come to believe this a good combination.) And at some point, i believe the universe steps in and puts on the breaks which is part of what i believe the right hand injury was about. The reason i don't eat at night is because of my acid reflux rules. Janine, your idea of eating dinner early so i can have the potato at 8pm is a workable one. Actually as i was writing the post before, i thought of that idea. Believe me, i am tons better than i was when i first started here. I checked out the books from the library, have returned them now, and am waiting for my own copies on order.
