latest easy-peasy lunch

Hi all,

Being one who really likes easy food I was a little concerned about doing easy

with veg meals. I found a recipe for hummus soup that is great for lunch at

work and takes minutes to put together in a tupperware soup mug.

I use 1/2 cup hummus (found one w/3gr protein in 2 T) 1/2 cup chick peas, enough

water to make it soupy (recipe called for vegetable broth) some frozen soycatash

(edamame and corn) and frozen roasted peppers and onions. fresh parsley if i

have time. Pop on the lid and it's ready to microwave for lunch. I have a ww

pita and yam cake with it for brown. Yummy.

Hi Janice,

 

I made your soup last night, or at least, I tried. Got the pan out,

started with the list and then it became a free-for-all with some of

this (brown rice) and some of that. I like to cook big so there are

left overs for lunches.

It was really good and even better today at lunch. I had a big test at

12:30 so the soup gave me sound nutrition to keep focused. It is

definitely one I'll make again. Thanks for sharing it.
