I'm on step 1 and used to find meat a really great breakfast option, but more + more I'm finding turned off by it. I feel I might eventually end up vegetarian with very little struggle on my part - I think I would feel closer to my soul's purpose that way... if that doesn't sound too silly. In the meantime, I think I struggle to digest legumes and nuts (can obv. investigate more in step 2), so I'm not ready to totally make the switch, but I am turning more to veggie breakfasts like just a shake + some rice. I wondered if anyone else had had this " I'm not sure I want to eat meat for much longer " feeling kind of creep up on them? I was veggie for a while in my teens, but it was a very conscious choice and a struggle and after 3 or 4 years I eventually lapsed. For now, I feel a pull in that direction but no desire to immediately take action (other than perhaps not having chicken for breakfast anymore). I guess I'll just see how things go for now. Just like you I feel a pull towards vegetarian food. My body seems uncomfortable with too much meat, especially red meat. Like you I was a vegetarian in my teens, and early 20s, but I can't see myself as a total vegetarian again. Mostly because it's hard to find protein sources that hold me as well as meat does. Beans work best, but I don't want to eat beans every day *smile*. Good luck with your breakfast! Yesterday I made a discovery in the shape of okra, not a veggie I am usually keen on since I found them a bit gluey at an Indian restaurant years ago. Well I saw some in the supermarket, took them home, and sliced them diagonally. I tossed the slices in gram flour with chilli powder & turmeric mixed in, then fried them in sunflower oil for a minute or two at high heat. Not bad! Usually I'll make a simple stir fry or stew with beans and veggies served with rice. I've also experimented a bit with lentil burgers. In a soup or stew lentils don't hold me, but the burgers seem to work. I'm staying away from soy for now since I'm nursing. I usually love cooking, but the baby takes a lot of time so cooking needs to be quick and simple. That makes it less fun, so I'm not that excited about cooking right now The okra sounds interesting, I've never tried it!
