step two class

Hi everyone,

 

I'm currently in the step two class. I just ordered YBS. I like the idea of

keeping it simple. I tend to complicate everything I take on and then feel

overwhelmed.

 

I'm finding I need to count, also and am still a bit confused as to how to count

things as a vegetarian. Are you all counting beans as a protein?

 

I've recently rediscovered nutritional yeast as a way to boost my protein. Are

any of you using it?

Hi Terry

 

I count beans as protein, yes.

 

When you say count, do you mean working out how much protein there is in a

particular food?

 

I know what I need (have you worked it out for you?), and I've come to an

understanding of how it translates in tems of pulses etc.

 

When I was working it all out I used charts like the USDA one online.

 

I just looked up a few key foods and took it from there.

 

I've not tried nutritional yeast myself.

 

So are you on Step 2 then? & nbsp;What are you having for breakfast?

thanks for your reply. Yes, I mean counting protein grams.

 

Yes, I've worked it out and it amounts to 20 gms of protein a meal.

 

The reason I ask is that I just bought the YBS journal and I noticed that the

beans I've been counting as protein are counted as brown in the front part of

the journal.

 

This morning I had oatmeal with soy milk and Restore. I'm rotating breakfast

meals. Seems I don't feel as well eating the same thing every morning.

 

I have a book where I look up approx. protein contents, but the USDA site is a

great idea.

 

Any food ideas you have would be greatly appreciated. I haven't found any lentil

recipes I like so far. I use beans, eggs, cheese, tofu, George's Restore and

Shake, powdered pea and rice protein, and now I've added the nutritional yeast.

That about covers it. Of course I'm eating lots and lots of veges.

Hi Terry,

 

I saw that you mentioned nutritional yeast. How do you use it? I used it once

when I was vegan many years ago and I used to it make maccaroni and " cheese " and

it was pretty good. It sounds like a great source of protein that I forgot

about, and I would love ideas on how to incorporate it into meals.

 

Also, I saw your lists of proteins. Do you eat wheat at all? I absolutely love

seitan. Someone here mentioned a brand called Field Roast. They make these

wonderful seitan sausages, each with 25 g of protein. I also make my own from

vital wheat gluten; it's really easy actually.

 

I also definitely count beans as a protein. It is one of my main sources.

I also count beans & lentils etc as protein.

 

I always have them with brown rice or another complex carb like buckwheat,

millet, or even pasta.

 

I do a basic lentils theme that I can vary.

 

It's too simple to be described as a recipe :

 

Fry seeds [onion, mustard, cumin, any you like] in oil, stir in lentils.  I tend

to use a bag of lentils [500g, or just over a pound in weight, that's 5 servings

for me or you I reckon].

 

Stir around and add boiling water.  Boil hard for 10 mins, then reduce to a

simmer and add any powdered spices [turmeric, coriander, curry powder etc] 

 

I sometimes add tinned toms or quite a lot [half a tube] of tom puree.

 

Simmer, adding water as required, until ready.

 

Add any veg you like such that it ends up cooked not mushy.  Mushrooms are good,

or squash or spinach.  I don't always add veggies.

 

Serve 20% of the end result with grain and veg of your choice.  A variety of all

is great.
